The UI Settings files for each character in the root EverQuest 2 directory have been updated several times over the many expansions that Sony has released.

If by chance you are using an older version of the UI files then it can cause the information not to save correctly.

Also, after making any UI changes always ensure you either camp to character select or camp to desktop, don't just /exit. When you exit directly, the client just shuts down and does not save anything locally. As a general rule, /exit should only be used if you need to shutdown the game immediately and cannot camp.
