Mardigann: This is how I believe it should be done...but I don't have ProfitUI installed, so I can't test it first-hand.
Some of the steps you already have done, of course, but hopefully they work and putting them all in one place will help folks in the future.

1. Download my XP bars -- of course
-- and extract the files.
2. Rename the included "
eq2ui_mainhud_experience.xml" to "S
eagoat_Experience.xml".
3. Open "S
eagoat_Experience.xml" in a
plain text editor and on line 2, change this:
...to this:
4. Add this line to "
eq2ui_custom.xml":

If you don't have an "eq2ui_custom.xml" file, you can create one in a plain text editor; just copy and paste the following code:

5. When you login to the game, use this command to show the new XP bars file:
