Really sounds like something is messing with the files so they do not get correctly written to disk. That's also why the updater keeps downloading them.

Can you post the broken eq2ui_mainhud_map.xml from the ProfitUI folder here as an attachment?

If it does not work, you likely installed it incorrectly. Always try a clean install before reporting bugs.
