If only the default interface is listed in the /loadui that means your custom interface files arnt in the correct place. Make sure your files arent in a folder inside of a folder. Also make sure there is a eq2ui_skininfo.xml in the custom folder.
C:\Program Files\Sony\Everquest II\UI\myinterface\
C:\Program Files\Sony\Everquest II\UI\myinterface\myinterface *wrong
/loadui will give you problems if you use it but you can use it as a diagnosing tool to see if EQ2 see's your interface folder and if it doesnt the eq2.ini trick is not going to work.
