To do that would require adding a new POI category for every quest and then populate them with the appropriate POIs. You would then have to sort through every single quest each time you wanted to find one in its category.

Even thought something like that might be technically possible to work around in the current system, the limitations and sheer scale of it would make it a massive timesink for a nigh-useless system in the end. You can already search POIs by quest name (since most quest-related POIs include the quest name in their description) or by mob name and it will eliminate everything that doesn't match.

And there is already a button that will create a waypoint to a selected POI in that list: click the POI in the list to select it and hit the "path" button at top.
