The viewing area, whether obscured by letterboxing or by UI elements, is a certain size. Since you can pan around however you wish, the amount of obscuration (I think I made up a word), doesn't have the same value as it would in a non-interactive TV picture.
It isn't the best analogy, but I couldn't think of a better one.
So...you prefer a larger area through which to view your world with smaller sized chat boxes, hotkeys and other information. I prefer larger chat boxes, prominent health bars, and easy to click hotkeys...and I'll settle for my 2/5 viewable screen as a compromise. Frankly, since most of the time I'm fighting things I've seen before, in areas I've seen before with other characters I've seen before, the loss of viewable area isn't all that important.
And all the screenshots I have are sans UI...maybe I'll remember to get one tomorrow
