Not sure if it will solve the issue or not (since using the default UI seems to work fine without it being done), but try deleting your window placement file (SERVER_CHARACTER_ui_settings.ini) file and let the game create a new one (or use the window wizard in the Thor AU to do so, so you don't have to manually arrange the windows)
On a side note, it's generally a good idea to run the updater every time you play, just in case Faetyl does any emergency updating. You can still run the updater even if you do use non-ThorUI components without worry of those files being overwritten as long as you either a) don't have that particular window selected in the Features section, and/or b) have the "Do Not Update if local file is newer" option checked (found in the Advanced Options section)
