You have to rename the file you want to work.

The important files are located in /images
fetish_bars.dds
_ribbed_fetish_bars.dds
_simple_fetish_bars.dds

If your anal-retentive like me (or just want to keep things organized) do this:
1) Rename "fetish_bars.dds" to "_metered_fetish_bars.dds"
(cause thats what it is, its the metered style)
2) Copy the file of the style you want and paste it in the same folder:
"Copy of _ribbed_ fetish_bars.dds"
3) Rename "Copy of _ribbed_fetish_bars.dds to "fetish_bars.dds"

Now you have all the original files and can keep them strait for changes later.

I would like to ask how to switch between 3 styles? As I know that its default that metered, how can I switch to simple?

The health bars change color normally, based on health percentage, just like the default UI

00-25% = Red
26-50% = Orange
51-75% = Yellow
76-100% = Green

Something like that, whatever the norm is

Great mod but I would prefer the health bars to be the traditional bright green on a dark red background. As a healer the contrast of green over dark red is much more intutitive and screams "heal me" more than red on black.
