I change the folder name each time, since it's intended to be used as a fresh install; keeping the same name encourages folks to simply overwrite, which can lead to issues when files are removed.
I don't include any uiconfig files if that's what you're talking about; most users have their own setups and maintaining those files for a variety of resolutions just adds to the time of maintaining the UI. If you're talking about the eq2.ini not being included, I can add one if folks would prefer it there.
The POI directory is used with EQ2MAP. To keep file size down I don't include the images or POIs; just run the EQ2MAP updater after installing the UI and it will update the maps. If you want to make it a bit quicker you can copy the POI and images folder from your old Fetish install as well.
