You gain status within the tradeskill society with each task you perform (not quite sure what exactly the higher status does, though; perhaps it allows you to buy basic tradeskilling goods at a dscounted rate?).
In order to produce a lower quality item, all you need to do is hit the Cancel button once you create the necessary quality of the item.
